It sounds quite delusional that Notary is asking for a social number.
A notary's job is to confirm your signature. An ID card is enough for that. Some ask that you bring 2 IDs (for example, a passport and a driver's license). There is absolutely no need/necessity to show social media. I have been dealing with notaries in the US on a regular basis for about 20 years and I have never been asked to present a social.
Go to any bank with a big branch they have a notary who can sign
